Jakarta, 11 Maret 2024 – Diversifikasi konsumsi pangan sumber karbohidrat merupakan salah satu upaya untuk menjaga keamanan pangan dalam negeri. Produk pangan lokal dinilai merupakan salah satu pilihan yang tepat karena memiliki ketahanan terhadap perubahan iklim dan cuaca. Salah satu komoditas pangan lokal yang potensial untuk dikembangkan adalah sagu.
“Pohon sagu dapat tetap tumbuh meskipun saat banjir ataupun pada saat masa kekeringan karena kemarau panjang, sehingga pohon sagu tidak terdampak fenomena alam seperti La Nina dan El Nino,” ungkap Direktur Jenderal Industri Agro, Putu Juli Ardika, di sela-sela acara Business Matching 2024 Belanja Produk Dalam Negeri di Bali, Rabu (6/3).
Sagu berpotensi dikembangkan sebagai alternatif bahan pangan sumber karbohidrat utama nasional karena Indonesia memiliki lahan sagu yang diperkirakan mencapai 5,5 juta hektar. “Luasnya lahan sagu tersebut dapat menjadi cadangan pangan sumber karbohidrat yang besar untuk dalam negeri maupun dunia, meskipun demikian pengolahan sagu dalam negeri belum secara masif dilakukan,” lanjut Putu.
Kementerian Perindustrian (Kemenperin) terus mendorong pengembangan hilirisasi sagu di dalam negeri melalui dukungan peningkatan produksi pati sagu dan diversifikasi produk olahan pati sagu. Pada tahun 2023, Kemenperin bekerja sama dengan beberapa industri besar produsen pati sagu untuk meningkatkan utilisasi produksinya. “Utilisasi produksi industri pati sagu nasional saat ini masih sangat rendah yaitu di bawah 30%. Hal ini sebagai dampak dari keterbatasan industri untuk memperoleh bahan baku empulur sagu,” terangnya.
Empulur sagu memiliki sifat yang mudah rusak karena cepat teroksidasi, sehingga industri tidak dapat memperoleh bahan baku empulur sagu dari lokasi yang jauh. Pemerintah bekerja sama dengan industri pati sagu untuk mengembangkan model bisnis industri pati sagu dengan menggunakan sagu basah produksi UMKM sebagai bahan baku industri pati sagu. Pemanfaatan sagu basah UMKM ini dapat memperlambat proses oksidasi sehingga jangkauan bahan baku industri pati sagu semakin luas serta dapat memberikan nilai tambah pada petani sagu.
Selain pengembangan model bisnis sagu, Kemenperin juga mendukung diversifikasi produk olahan pati sagu. Pati sagu saat ini sebagian besar banyak dikenal sebagai bahan untuk membuat papeda, namun saat ini sudah mulai tumbuh industri pengolahan sagu menjadi produk yang modern seperti mi instan dan beras analog. “Produk pangan olahan ini berpotensi menjadi pangan utama pengganti beras terutama pada saat terjadinya kelangkaan beras,” kata Dirjen Industri Agro.
Dalam Pameran Produk Dalam Negeri yang merupakan salah satu agenda Business Matching Pembelian Produk Dalam Negeri 2024, terdapat dua perusahaan industri pengolahan sagu yang diundang untuk berpartisipasi, yaitu PT. Galih Sagu Pangan dan PT. Langit Bumi Lestari.
PT. Galih Sagu Pangan menampilkan produk Sagu Mama Papua, yang merupakan nasi sagu siap saji. Perusahaan juga memproduksi beras sagu dengan butiran yang cocok menjadi pengganti nasi dari padi. Produk tersebut memiliki keunggulan seperti indeks glikemik rendah, bebas gula, bebas gluten, serta rendah natrium. Nilai Tingkat Komponen Dalam Negeri (TKDN) beras sagu produksi PT. Galih Sagu Pangan mencapai 80%.
Sedangkan PT. Langit Bumi Lestari yang berasal dari Bangka, Provinsi Bangka Belitung, memproduksi beberapa produk makanan berbahan baku sagu, di antaranya Sago Mee, Pati Sagu Golden Sago, serta pati tapioka. Sago Mee disebut sebagai produk mi instan bebas gluten pertama yang terbuat dari sagu. Adapun nilai TKDN produk mi instan sagu ini mencapai 40%.
